Baked Mahi-Mahi Fillets Recipe  Ingredients:  4 mahi-mahi fillets  1/2 cup lime juice (fresh)  2 tablespoons butter  1/4 cup rum  2 onions, sliced into rings  1 lemon  1 tablespoon Blackening Seasoning  Black & Hot pepper to taste    Place the mahi-mahi filets in baking dish, season w/ rum, lime juice, spices, and onions.  Cover & refrigerate overnight.  Preheat oven to 325, bake marinated covered for approx 20 - 30 minutes.  Dish is done when fish flakes easily with a fork. #recipes

dry rubbed baby back ribs...totally AMAZING!!!!! Used on yummy pork ribs. Didn't have any coconut crystals so just added a pinch of sugar. Also added marjoram and dill as spices. divine. really truly!
