We raise Saanen dairy goats, and I love making cheese from this brilliantly white, pure, sweet milk. Here is one of my favorite recipes:  French Style Chevre  5 qts. Goat Milk   1/2 c. cultured buttermilk  2 Tablespoons diluted -liquid rennet   (Dilution is 3 drops rennet into 1/3 c. cool water)   Warm milk to 80 degrees  Stir in the buttermilk– mix well.  Add the 2 Tbl rennet mixture/stir well  Set 8-12 hours   Pour into cheesecloth-lined bowl  Hang to drain for 8 hours  Season and enjoy!
