Lentil and Sweet Potato Curry - I used green lentils, 1.5pints stock made using 2 Kallo stock cubes. I used regular tomatoes instead of fire-roasted and added 1/2 cup sundried tomatoes to it. Did not add salt. Used half a bag spinach. Absolutely delicious! Will make again!
