Sounds amazing. I would skip the optional Tofu, since I ate enough of that stuff for a lifetime when I was vegetarian.     

Besides the obvious this recipe has sunflower seeds, lemon juice, rice vinegar, agave, and is seasoned with cumin, chili power, salt and pepper. Sounds very interesting and delicious
