Honey Siracha Chicken Thighs. The recipe calls for boneless, but a commenter says that bone-in will work with an extra 6 minutes: 18 minutes, baste, 18 more minutes. Verdict: Delicious. This will go in our regular rotation!
Southern Fried Chicken: This is the way my mother and both grandmothers, all born and raised in the country, always made fried chicken. I still make it this way. Momma used Crisco shortening and a cast-iron skillet, and so do I. Allowing the chicken to "season" overnight before dipping it in buttermilk and then dredging in flour are the keys to delicious flavor and great crunch. (Peanut oil is a good alternative to shortening, but it adds a distinct flavor.)
