This tastes like the best stuffing ever, it is baked in a 8x10 casserole, just like regular bread stuffing, but is so moist and flavorful. A great way to use excess zucchini from the garden, or just freeze the grated zucchini and use for future enjoyment in this dish.
Scalloped Zucchini - COMBINE: 1 c bisquick, 1/2 c vegetable oil, 4 lg eggs, 1/2 tsp salt. AFTER MIXING WELL, ADD: 1/2 c finely chopped onion, 1/2 c grated cheese (your choice!). 3 c thinly sliced zucchini. Pour into sprayed 10 in pie or 9/13 dish. Bake 360 for 30 min.
