Preservation by sugar was already known in ancient cultures such as the Chinese and the Mesopotamian ones (palm syrup and honey). It was often the only available method of preservation: the Romans used honey to maintain even fish. The true pioneers of modern candying were the Arabs, who served candied citrus and roses in the most important moments of their banquets.
