blueberry creme with vanilla sauce. blueberry creme 425g milk
100g blueberry reduction
1/4 vanilla bean seeds and 1/4 tsp vanilla extract
1/4 tsp salt
1 tsp kirsch
(optional: a few drops of food coloring) bring milk, blueberry reduction, vanilla, sugar, salt and kirsch to a boil.
let stand for 1 hour.
mix together eggs and cornstarch with 3 tbsp of the blueberry mixture (sieve if it clumps).
