Veggie Egg White Morning Muffins 1.  Preheat oven to 350  2.  Chop veggies into small chunks.  Add 1 T olive oil to pan and add pep. 3.  Add asparagus and spin to the pan and saute for  2-3 min.  4.  Pour eggs in bowl and mix in veggies 3.  Fill muffin tin with the egg and veggie mixture.  Be sure to leave a little room at the time as they rise 4.  Bake for 20-25 min or until fully cooked.  To check if fully cooked stick a knife down the center of each muffin and it should come out clean
