Beet Braised Lentils | Feasting at Home *Boiled 2 beets until tender and blended them with the boiling water to make a beet puree in place of the beet juice. Used leftover boiling water to make up some of the 4C of veggie broth. Used 1t dried thyme. This was SUPER good. Very earthy, but delicious. Made enough for 2 dinners & 5 leftover portions!!
