There is nothing like dropping food in a crockpot, leaving, and coming back to house that smells amazing, and dinner thats already done! This was a HIT with EVERYONE in the house even the baby! This taco chicken chili is a delicious, low calorie, high fiber meal. I ate it just as it was, with a sprinkle of low fat cheddar cheese and plain greek yogurt or you can do low fat sour cream. There was enough for a fam of 4 and leftovers as well!
Mini ham and cheese frittatas are so easy to make, and delish! I use 3 eggs per dozen mini fritattas and add whatever is in the fridge......ham, cheese, onion, pepper, bacon to make it a different dish each time!
