Arroz con corned beef - another Puerto Rican favorite that just about everyone has their own recipe for. My mom cut the potatoes into extremely thin french fries, did not use salt, and added a few olives. It was always served with a salad dish on the side, which basically consisted of lettuce and tomato with oil and vinegar. Love it!
Receta Coconut Custard/Tembleque Puerto RicoTembleque - a coconut and cornstarch dessert some call a pudding. but in reality a custard. It is my childhood and a very common Puerto Rican holiday center of attraction. Christmas time ... all twelve days of Christmas.
I love Shaved ice with a scoop of vanilla frozen yogurt on the bottom of the cup. That's how I always ordered it at the little underground frozen yogurt shop at Ala Moana Plaza in Honolulu when I was a kid.
