Egg white muffins~ These were SO good! I made mine with spinach, onion, yellow & orange bell peppers, a little bit of diced ham and low fat cheddar cheese. The hubby approved and I love the fact they last a week in the fridge and I can just pop them in the microwave. Make sure you spray the muffin tins really well. I had to soak the pan for days and it was still a pain to get it all out.

Clean Mayo: I refuse to pay 5 bucks for a small jar of organic mayo, so I made some instead, and it is YUMMY! INGREDIENTS: 1 egg yolk 1 1/2 tsp fresh lemon juice 1 tsp vinegar (Ones to try: White, white wine or apple cider vinegar.) 1/4 tsp Dijon mustard Sea salt, to taste 1/4 cup extra-virgin olive oil INSTRUCTIONS: In a food processor, blend first 5 ingredients. With food processor running, slowly pour in oil. For best results, chill before serving.
