DELICIOUS!! I made these this morning. Banana bread pancakes: 1/2 c oats, 1/2 banana, 1/4 c cottage cheese, 2 egg whites, cinnamon. So much yummier than plain old oatmeal with cottage cheese on the side!
1/3 cup buckwheat flour (ground) 2 tbsp protein powder 1/2 tsp baking powder 1/4 tsp baking soda 1/4 tsp cinnamon Pinch of salt 1/2 cup almond milk mixed with 1 tsp vinegar 1/3 cup pumpkin purée 1 tsp chia seeds mixed with 1 tbsp water as an "egg" (or just use egg white) Mix dry, mix wet, gently combine the two.
