Low Carb Tuna Rice Casserole - I was looking for something different to eat during Lent and stumbled upon this recipe...OMG! Sooo good! I omitted the mushrooms (don't like them), which I'm sure brought down the carb count even more!
Cauliflower Pizza Crust! We tried this last night, and it's been our favorite gluten-free crust so far. We tripled the recipe and mixed our seasoning into the dough, instead of just sprinkling it on top. It's best if you keep it thin and the toppings to a minimum, otherwise it won't stay crisp.
