Slow-Cooker Bean and Spinach Enchiladas. Made these in the oven instead of the slow-cooker. Stayed pretty true to the recipe, but doubled it. Tasted good, and easy too. Kylie helped me assemble the enchiladas. Baked in the oven at 350 for about 35 min.
