Lobster Thermidor: 1 1/2 pounds cooked lobster, 2 T butter, 1 minced shallot, 1 3/8 c fish stock, 1/4 c wine, 1/4 c Greek yogurt, 1/2 t dijon mustard, 1 T lemon juice, 2 T parsley, s & p, 1/4 c Parmesan cheese cook butter,shallot, fish stock, white wine & yogurt til reduced by half. Add mustard, lemon juice, parsley, s Broil lobster meat in shell w/sauce spooned over & Parmesan cheese on top for 3 to 4 minutes, just until golden brown. Serve immediately.

Ok, I actually made the solution today, and it made fabulous bubbles, but two issues: 1) the cornstarch will dissolve in the water when it is stirred, but after it sits for 30 min or so, all the cornstarch settles down to the bottom again and makes a really thick paste. What is the purpose of the cornstarch? 2) the "secret ingredient" never did fully dissolve either, even when I used very hot water. Any reason to use that rather than glycerin? (other than I had it in the house?)
