Low-Carb Protein Cinnamon Rolls Ingredients: The Dough: 1/2 cup coconut flour 1 scoop plain or vanilla protein powder 2 egg whites (or 1/4 cup) 1 teaspoon xanthan gum 1/2 teaspoon baking powder 5 tablespoons water (or enough liquid until a dough you can roll forms) Dash of salt Sprinkle of stevia Filling: 2 packets stevia 2 tablespoons ground cinnamon 2 tablespoons ground almonds 2 tablespoons water 1 tbsp vegan butter or 1-2 tbsp apple sauce (optional but adds flavour!)

Pumpkin French Toast, vegan and I made with gf bread.  I just mixed all ingredients except bread together, then poured it over bread.  For sugar, I used turbinado.  Family LOVED this.
