My fantastic Sunday night dinner...rainbow quinoa, bean sprouts, cremini mushrooms, shredded broccoli, cauliflower, carrots, and red cabbage, topped with salmon, with a side of grilled asparagus. Salmon was simmered in coconut oil, with a sprinkle of Mrs. Dash no salt spice. All veggies were simmered on low with the quinoa. This meal is so yummy! Yes I made it myself! :)
