Melon shapes with mint and feta from Anja's food 4 thought. Cut melon into 1 1/2 inch thick slices. With cookie cutters of your choice cut, shapes out of the slices. Sprinkle with a little crumbled feta cheese and garnish with fresh mint leaves. Serve ice-cold.
Japanese Donburi (rice bowl). I love this, the variations are limitless! Great with salmon, chicken, shrimp... I like keeping the eggs in tact so while the whites cook the yolks are a little runny still, mmm. And I always add tons of fresh veggies!
