Vegan Cheese. Super easy recipe. SO GOOD, GUYS. SO GOOD. Base is carrots & potatoes but you'd never guess that by taste! I make a batch of this each week as it will keep for a week. Use it to substitute other cheese sauces (like Velveeta) in recipes and my 3yo loves it on pasta as "mac n cheez"
Spaghettini with Creamy Kale Sauce. Turned out pretty good with ricotta and plain coconut milk subbed in for real milk. In the future, I might run everything through a food processor, and try blending some herbs into the sauce.
