Cauliflower Rice

Cauliflower Rice: 1 large (2 small) ofcauliflower heads 2 Tb. olive oil Salt Oven = 450F. Cut cauliflower in half. Remove core & leaves. Roughly chop cauliflower & place in food processor. Pulse until the cauliflower is small and fine like rice. Dump onto a baking sheet. Drizzle olive oil over top. Miix with your hands. Spread cauliflower rice out into thin layer. Sprinkle with salt. Roast in oven 5 minutes. Stir and smooth out again. Roast, another 5 minutes. Serve warm.
