Meatless too!! I used mild enchilada sauce & that was plenty spicey for me. I did not use the broth or the extra pepper. Don't skimp on the enchilada sauce especially if you are expecting to have left overs. The tortillas really soak it up. Really good!!
Black Bean and Butternut Squash Enchilada Casserole **NOTE: VERY GOOD!! BUT...add 2 tsp cumin and 2 tsp chili powder. 1 tsp of each is not enough. Next time, maybe also add chopped green chilies for more of a kick. And add chopped green onion on top.
