New England Apple Cider Cake ~ very delicious... chock full of sliced Granny Smith apples in a simple, sweet cake that gets great flavor and moisture from cinnamon, heavy cream and apple cider! This cake also has a delicious, creamy apple cider glaze that gets drizzled over the top when served!
DO NOTHING CAKE - 2 c. sugar; 2 eggs; 1 tsp. vanilla; 16 oz. crushed pineapple, undrained; 2 c. flour; 1 tsp. baking soda. ICING: 1/2 c. butter; 1 c. sugar; 3/4 c. evaporated milk; 1 c. coconut; 1 c. nuts; 1 tsp. vanilla. CAKE: Blend first 6 ingredients in a bowl. Pour into 13"x9" cake pan. Bake 350°F 35-40 mins. ICING: Mix butter, sugar & milk together. Cook over medium heat until a little thickened. (about 5 mins. at a boil). Remove from heat Add remaining ingredients. Pour over hot cake.
