Vegetarian entree for the week of November 30th: acorn squash and apple gratin topped with butter-poached root vegetables and roasted peppers. I used a roasted pepper purée between the layers of squash and apples and topped with a tarragon béchamel and herbed Parmesan breadcrumbs.
