~Spinach Garlic Quinoa~ 1 tbsp olive oil; 1/2 yellow onion minced; 2 cloves minced garlic; 1/2 c uncooked Quinoa; 1 c chicken broth; 1/8 tsp pepper; 3-4 c fresh spinach chopped; 1/4 tsp sea salt. Heat oil in skillet, add onion & garlic. Cook until translucent. Add Quinoa, stir frequently until Quinoa is golden brown. Add broth & pepper. Bring to boil, reduce to simmer 15 min. Stir in spinach, cover about 4 min, season & serve.
