Oatmeal & zucchini muffins. TRIPLE RECIPE: 3 packets IP maple oatmeal cereal, 3 eggs, 3 cups shredded zucc, 1-1/2 tsp baking powder, 1-1/2 tsp cinn, 1/2 tsp pumpkin pie spice, 1 tsp vanilla, 1/4 cup water, pinch salt. Mix together and divide into 12 "whoopy" muffin tins. Pam the tins - don't use papers. Bake 385 for 20+ min. Gives 1 pkt IP, 1 cup veg, & 1 egg portion of protein.
