My most requested recipe during the holidays is my holiday fruit salsa. It is delicious! Segment 5 lbs of oranges, seed one pomegranate, chop one avocado, sliver half of a red onion, and chop roughly 2T of fresh cilantro. Combine and enjoy as a side or with whole grain tortillas.

This is an example of one of the lunch recipes that I make in bulk on Sunday and then eat for lunch during the early part of the work week. I prep 3-4 days in advance depending on the ingredients.
