1 cup cornmeal, 1cup of almond milk, 1 1/2 cup flour, 2/3 cup sugar, 2tsp baking powder, 1/2 tsp salt, 2 eggs, 2 Tbsp oil, 2 Tbsp honey,1/2 cup of fresh bluberries, 1/8 cup of lemon juice and 1/4 cup of applesauce. Mix cornmeal and milk and let sit for ten minutes. Then mix that with the wet ingredients. In a separate bowl, mix the dry ingredients and combine with the other mixture. fold in the blueberries. Preheat oven to 400 for the muffins, or 350 for a 9X9 glass pan.
