Lebanese Meatballs. Excellent--handled very lightly so they were fluffy and not dense/hard. Used all beef (no lamb on hand) and finely minced white onion as I didn't have green onions, made them appetizer size and fried in a skillet with olive oil. Packed into pita with homemade tzatziki, they were delicious!
Shevid Baghali Polow - Dill & Lima Beans Rice. i thaw the fava beans,peel them n then fry them in 2 or 3 tbsp of light vegetable oil, continue frying until dry,add 1/2 tsp turmeric and fry for another minute. set aside..mix with rice,fresh chopped dill .. this will stop the fava from becoming mushy while steaming with rice.this was taught to me by an old chef.
