Gluten-free 'no bake' Granola Bars  1 3/4 cups gluten-free oats  1 3/4 cup gluten-free rice cereal or rice krispies  ½ cup shredded coconut  1/8 cup ground flax seed  1/3 cup honey  1/3 cup brown sugar  pinch of salt  1/3 cup creamy peanut butter – with the recall, you can use almond or sunflower butter  1 teaspoon vanilla extract  1/2 cup mini chocolate chips – or replace with dried fruit

Smitten Kitchen almond date breakfast bars --- Kelly brought these to a play date recently and they were awesome. She made them w/ peanut butter and cranberries instead of almond butter and dates. I will also have to sub ground flax seed for the wheat germ (will need to add a little more honey to balance out the taste).
