This morning my boyfriend surprised me with this beautiful healthy breakfast omelette!  Yes the man cooks!  Keep in mind this man hated broccoli when we first met but after some trial and error has learned to love (or at least tolerate) the green stuff. If youare at a fast food joint ask them to hold the potatoes and cheese add in fresh tomatoes and you've got yourself a healthy breakfast. If they have corn tortillas even better!
