Ingredients
• One 15 oz. can of chickpeas, drained and washed
• One large cucumber, sliced
• 1/4 cup parsley, chopped
• 10-15 mint leaves
• 1/2 cup feta cheese, crumbled
• 1/4 cup pickled red onion
• 1/2 cup pistachios, crushed
• 1 cup quinoa, cooked
Combine in a large bowl then add a dash of salt and pepper. Drizzle balsamic vinegar over your serving and enjoy!
