This minimal ingredient recipe results in smooth and velvety ice cream that is free from dairy and soy but tastes just as just as creamy, thanks to the fat from the coconut milk and nuts 😋

-1 cup peeled pistachios
-1 cup 70% coconut milk (240ml)
-1 tsp vanilla extract
-4 tbsp agave
-pinch of salt
👇🏾method👇🏾
-blend the pistachios into chunky powder, remove some for later then add the rest of the ingredients and blend until smooth. Keep blending, it may take a few minutes to get really smooth.
-place in a sealable container, line with parchment paper, seal and freeze for 1hr. Stir and freeze for 1hr, repeat for 6-8hrs.
-before the final freeze add some slightly crushed pistachio, top with crushed pistachios when serving and enjoy.
