Black Bean Soup 6 slices bacon, finely chopped 1 med red onion, diced 4 cloves garlic, minced 1 (14 oz) can low-sodium chicken broth 1 (14 oz) can diced tomatoes 1 tsp Worcestershire sauce 1 Tbls chili powder 2 (15 1/2-oz) cans black beans, drained and rinsed 1 (15 oz) can refried beans Kosher salt and freshly ground black pepper 1/3 C fresh cilantro or parsley, chopped juice of 1/2 lime sour cream, extra sharp cheddar cheese, grated, for serving tortilla chips
Seared Scallops - Wash and pat scallops dry. Get them as dry as possible or they will stick to pan. Place them one by one in very hot pan. Do not crowd them. Moisture and crowding will cause them to steam. Sear 2-3 minutes per side.
