Stuffed Portobello Mushrooms with Crispy Goat Cheese. Use jarred or make fresh sauce (chunky, dry), layer grilled mushrooms in a lasagna pan (no rack) and layer mushrooms, tomato sauce, spinach, goat cheese, bread crumbs. Cook as indicated.
Creamy Polenta & Mushrooms. Okay...definitely different. I love mushrooms so that was a plus, but I've learned that I don't love tarragon - a licorice flavor. I would leave that out & use less salt next time. Derek said it needed meat :)
