Pork Zuppa, now this really looks good. I just happen to have some nice Venison Sausage I need to use.

Venison Cheddar-Jalapeno Summer Sausage (Can use ground sirloin) I add extra jalapeno and cheddar. May try with pepper jack. Nitrate free Tenderquick 2 T Kosher salt 1 T brown sugar. *Mine was still a bit crumbly with extra cheese. I will try adding a bit of ground suet next time. WOW! Hundreds of repins!
