The beer brine for this chicken was so easy and made my whole house smell like baking bread while the chicken cooked. It's a lot easier than cutting up onions and lemons for the chicken and made the meat so increadably tender.
Grilled Asian Sweet & Spicy Chicken over Brown Rice. Baked well with chicken tenderloin at 425 for 20 minutes. My grocery doesn't have plum preserves so I tried with cherry; should also try apricot. I served with Asian slaw instead.
