Crispy Roasted Okra - coconut oil, salt, pepper, & garlic salt @ 450 degrees for 25mins. So good!

Baked garlic & brown sugar sesame chicken  Will definitely make again with a few changes. Used convection oven - will use regular bake cycle next time. Used minced garlic - will use fresh garlic next time. 1/3 brown sugar and added 1 tbsp sesame seeds.

Buttery Lemon Spinach.  Even spinach haters like this!  Just use the ingredients & measurements from this recipe, sauté olive oil (or butter), lemon & garlic in stock pot remove from heat then stir in spinach.  It will wilt down and cook enough but not be too soggy or too crispy.  I'm not a fan of the microwave.

Parmesan zucchini bites: 4 medium zucchini cut in half. 1/2 cup grated parmesan cheese 1 to 2 tablespoons minced rosemary and thyme.  Smidgen of olive oil Salt and pepper to taste PREHEAT OVEN TO 350 Place zucchini on foil lined baking sheet Lightly brush zucchini with oil Mix cheese and herbs together Spread onto zucchini with salt and pepper Bake 15 minutes and then broil for 3 to 5 minutes until cheese is crispy and browned.
