26K views · 651 reactions | ✨ Strawberry Cheesecake Slice ✨ Day 19 of 25 days of Christmas Recipes 🎄🎅🏼 🎁 Ingredients: * 250g packet plain biscuits * 100g butter, melted TOPPING * 250g thickened cream - see notes * 250g cream cheese, softened * 2 Tbsp caster sugar * 1 tsp lemon zest * 2 Tbsp strawberry jam * 250g strawberries Method: 1. Line the base of a 20cm square tin with baking paper. 2. In a food processor, place the biscuits and blitz to a fine crumb. Add the melted butter and blitz again until combined. 3. Pour into the lined tin. Spread out to the edges and smooth the top with a spatula. Place in the fridge to chill while you make the topping. 4. Add the thickened cream, cream cheese and sugar to a bowl then whisk until well combined with a handheld mixer or in a stand mixer. 5. Fold in the lemon zest and strawberry jam then pour the topping on top of the chilled base. Spread out evenly. 6. Slice the strawberries and arrange them on top then place in the fridge overnight to set completely. 7. Once set, remove from the tin. Remove the baking paper from the base and place on a serving plate. 8. Carefully slice into 16 even pieces using a sharp knife and wiping it clean with a paper towel between each slice. Keep in the fridge until ready to serve. I actually did test it with light cream and surprisingly it worked just took longer to set but would recommend and regular thick cream. Natural granulated sweetener works too! And if you put them in the freezer for an hour or 2 , wowza! Ingredients: 3 medium Lemons 1 cup heavy cream (240ml) 50g of sugar Cut each Lemon in half, remove the flesh and squeeze out the juice into a jar. Zest from the bottom of the Lemon directly into a saucepan, then add your cream and sugar. Bring the mixture to a gentle boil then reduce heat to a simmer, whisk constantly for a few minutes or until mixture has thickened slightly. Pour the mixture through a strainer, then add 3 tbs of the reserved lemon juice from the jar also through the strainer. Remove strainer and whisk to combine.
