Curry Lentil Soup (30 min meal)
Curry lentil soup is an easy and tasty one-pot recipe where earthy lentils are simmered in a delicious curry sauce with spices, tomatoes, and vegetables.
Ingredients: -2-3 tbsp oil/broth - 1 tbsp butter - 600g beef (cubed) - 1 large onion (chopped) - 2 garlic cloves (minced) - 4 small eggplants (cubed) - 3 green peppers (sliced) -1-2 red/yellow peppers (sliced) - 2 tomatoes (chopped) - 1 tbsp tomato paste - 1 tbsp pepper paste - 2 cups water - 1 tsp salt - 1 tsp red pepper powder - 1 tsp black pepper Instructions: 1. Sauté beef in oil and butter until browned. 2. Add onion and garlic, cook until translucent. 3. Mix in peppers, tomatoes, and pastes. 4. Add water, spices, and pre-cooked eggplant. 5.
