This is a very quick, healthy and tasty mid week supper with Chicken and vegetables in a slightly spicy sauce. Can be adapted with any meat or fish cooked the same way or nice as a vegetable dish without any meat. Serve with Jasmine Rice or Noodles.
This makes a good Mexican party dip as well as a good side for chilli con carne. Its also great in bean nachos or just by itself with melted cheese on top. Unlike real refried beans this has no pork fat.
