Kale Frittata - NOTES: holy #$%^ this is freakin' delicious!  Skipped the mix-eggs-with-cheese step and just put cheese on half under the broiler, to accommodate K.  Perfect just as written - we thought about playing with spices, but the salami adds a ton of flavor, so just S & P is sufficient.  Served with biscuits and sauteed cherry tomatoes with garlic and basil.

Sweet Potato Kale and Quinoa Fritters - they are sooo yummy. I used springonions instead of kale, oatmeal instead of panko and just one egg... I love them!
