DUKAN OAT BRAN MUFFINS Serves 4 4 eggs, separated 8 tbsp oat bran 4 tbsp virtually fat-free fromage frais (or a mixture of half extralight cream cheese, half fat free greek yoghurt) ½ tsp sweetener Flavouring of your choice (lemon, cinnamon, coffee) Preheat the oven to 180c/350f/gas 4. Beat the egg whites until stiff. Mix the other ingredients, then gently fold in the stiffly beaten whites. Pour into individual muffin cases and bake for 20 to 30 minutes.
