100gms olive oil, 50gms dark brown sugar, 2 tablespoons honey, 2 eggs, 2-3 over ripe small bananas, 225gms Wholemeal SR Flour, 2 heaped teaspoons cinnamon. Chuck it all into blender and mix. Spoon into muffin cases and whack some walnuts on top if you like. Bake for 25 minutes in moderate heated oven until tops are golden and cracked. Makes 6 large muffins.
