Chicken and Mushroom Crepes - Batter 8 oz milk 4 eggs 1 scant c flour 1/2 t kosher salt 2 T finely snipped fresh chives Filling 10-12oz chicken breast 3/4 c chicken stock 1 T unsalted butter 6 oz small button mushrooms, sliced Freshly squeezed juice of 1/2 a small lemon Kosher salt and white pepper 1 T finely chopped fresh tarragon leaves (or 2-3 T chopped fresh parsley) Mornay sauce - 2T unsalted butter 2T flour 2c milk Salt and pepper 2 egg yolks 3oz Gruyere
