Cauliflower "Rice" (Variation) ~ Heat over medium heat: 3 TBSP Olive Oil ~ Add: 1 medium Onion (chopped) ~ Saute' until soft & translucent ~ In food processor, pulse until texture of rice: 1 large head Cauliflower ~ Add Cauliflower to skillet ~ Cover & cook for 15-20 min until soft, stirring occasionally ~ Salt & Pepper
