(Similar to what we do for peanut butter as cacao nibs have 50% fats & 50% solids) 2️⃣ Add cacao butter or oil, sugar and grind again. 3️⃣ Now here’s the trick, do not continually grind as it will overheat. Ideally the temperature of this mixture should not go above 55 C. 👉But if not using thermometer, not an issue, judge with your touch, the mixture or the jar shouldn’t be hot, it should be mildly warm only. 👉Grind it, once it heats, let it rest till it cools down a bit. Grind again, repeat this for atleast 10 times till the mixture is very smooth
