Fully loaded potato skins (variation on Nigella Lawson recipe)  Bake 6 potatoes in oven until soft, allow to cool. Cut in half, scoop out most of the flesh & reserve. Mix potato flesh with approx 1 cup sour cream, 1/2 a bunch of shallots, splash of Worcestershire sauce, good grinding of salt & black pepper and 1/2 cup grated cheese. Fill hollowed out potato skins with mixture, top with cooked bacon pieces & extra grated cheese. Cook in oven @ 180C until hot & cheese is melted

Homemade strawberry jam.  500g strawberries chopped 3/4 cup caster sugar 1 Tbspn lemon juice  In a saucepan stir over low heat until sugar dissolves. Increase heat to medium & bring to boil stirring often. Cook for 10 minutes or so until thickened. Pour into jar & cool before refrigerating. Lasts about a week in the fridge.
