2 cucumbers- cut up, 1 pint cherry or grape tomatoes (about 30), 2 tablespoons chopped fresh basil, 1 cup fresh mozzarella (I like to use the little balls), 1 avocado, 1 tablespoon extra virgin olive oil, 2 tablespoons balsamic vinegar, 1 teaspoon garlic powder, Salt and pepper to taste
Chicken Taco Casserole...preheat oven 350. mix 2c shredded chicken, 2c shredded cheese, can of cream of chicken, 1/2c milk, 1/2c sour cream, can of drained rotel, & 1/2 pack taco seasoning. Grease casserole dish. Crush 1/2 bag doritos and place in bottom, top with mixture, crush a few doritos on top. Bake for 30 minutes. Garnish with lettuce and tomato
